Chocolate Chunk Orange Cookies
1 1/2 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup butter, softened 3/4 cup sugar 2 tablespoons orange juice 1 egg 4 ounces coarsely chopped semi-sweet chocolate 2 tablespoons grated orange peel
In a small bowl, combine flour, baking soda and salt; set aside. In a large mixing bowl, cream together butter sugar and orange juice until light and fluffy; beat in egg. Gradually blend in flour mixture. Stir in chocolate and orange peel. Preheat oven to 375 °F. Drop by rounded measuring tablespoonfuls onto parchment-lined cookie sheets. Bake 10 to 12 minutes or until cookies are lightly browned. Slide parchment with baked cookies off cookie sheet onto a cooling rack. Remove baked cookies from parchment when completely cool.
